DISTILLERY

3Polis Distillery is located in the wider area of the Estate, in new independent building facilities. There, a traditional stone building houses all the necessary equipment for the production and bottling of the spirits. Additionally, this building has the ability to maintain the appropriate temperature and humidity conditions during all stages of production and storage of the products.

This new area is suitably set up for the reception of the grape stems and their import into the fermentation tanks. After the alcoholic fermentation is over, the distillation process takes place. Each distillation is a long-hour process carried out under the supervision of specialized and experienced personnel. At this point, technology and know-how are combined with traditional production practices. The grape pomace is led from the tanks to a modern Greek-made copper still with a capacity of 1,300 liters. The still is equipped with a clarification column, which helps to further concentrate the produced distillate, thus giving a fuller and more aromatic final product.

From the whole of the produced distillate, only the “hearts”, meaning the purest and clearest part of it, are kept, while the heads and tails are discarded. The final distillate is sent to the collection and dilution tanks. There, the high-grade spirit is diluted with water coming from a selected mountain Arcadia spring, until it reaches 40% alcohol. Then, it is lead to storage tanks where it matures until bottling. At the final stage of production we find the modern bottling line, where the packaging and labeling of the 3Polis tsipouro takes place.

You may find the tsipouro of 3Polis Distillery in three different bottles: 50ml, 200ml and 500ml.
